Cold Pesto Pasta with Cherry Tomatoes

Ingredients
  

12 ounces of pasta (fusilli or penne works well)

1 cup fresh basil leaves, packed

1/3 cup pine nuts (lightly toasted)

1/2 cup grated Parmesan cheese

2 garlic cloves, minced

1/2 cup extra virgin olive oil

Salt and pepper, to taste

2 cups cherry tomatoes, halved

1/4 cup black olives, pitted and sliced (optional)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

    Make the Pesto: In a food processor, combine the basil leaves, toasted pine nuts, grated Parmesan cheese, and minced garlic. Pulse until finely chopped. With the food processor running, slowly drizzle in the olive oil until the mixture is smooth. Season with salt and pepper to taste.

      Combine Pasta and Pesto: In a large mixing bowl, combine the cooled pasta with the prepared pesto, tossing until every strand is well-coated.

        Add the Cherry Tomatoes: Gently fold in the halved cherry tomatoes and sliced black olives (if using), ensuring they are evenly distributed throughout the pasta.

          Chill: Cover the bowl with plastic wrap or transfer to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld.

            Serve: Before serving, taste and adjust seasoning if needed. Garnish with fresh basil leaves and an additional sprinkle of Parmesan cheese if desired.
