Ingredients

2 cups of crispy rice cereal

1 cup of mini marshmallows

1 cup of mixed colorful sprinkles (rainbow jimmies, nonpareils, and edible glitter)

1 cup of white chocolate chips

1/2 cup of peanut butter (or almond butter for a nut-free version)

1/4 cup of unsweetened shredded coconut (optional)

1/2 teaspoon of vanilla extract

Pinch of salt

Instructions

Prepare Your Workspace: Line a 9x13 inch baking dish with parchment paper, allowing some overhang for easy removal later. Set aside.

Melt the Mixture: In a medium saucepan over low heat, combine the white chocolate chips and peanut butter. Stir continuously until melted and smooth. Remove from heat and add in the vanilla extract and a pinch of salt.

Combine Dry Ingredients: In a large bowl, mix the crispy rice cereal, mini marshmallows, colorful sprinkles, and shredded coconut (if using).

Combine Wet with Dry: Pour the melted white chocolate and peanut butter mixture over the dry ingredients. Stir gently but thoroughly until everything is well coated.

Press into the Dish: Transfer the mixture into the prepared baking dish using a spatula or your hands. Press down firmly and evenly to help the treats hold together.

Chill and Set: Allow the treats to cool to room temperature for about 30 minutes, then refrigerate the dish for another 45 minutes to help them firm up.

Cut and Serve: Once set, lift the treats out of the pan using the parchment paper overhang. Cut into squares or bars. Serve them in colorful treat bags for a fun back-to-school treat!
