Cottage Cheese Hashbrown Casserole

4 cups frozen hashbrowns, thawed

2 cups cottage cheese (small curd)

1 cup sharp cheddar cheese, shredded

1 cup sour cream

1 medium onion, finely diced

2 cloves garlic, minced

2 large eggs, beaten

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 cup green onions, chopped (for garnish)

Cooking spray or butter for greasing the dish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Baking Dish: Grease a 9x13-inch baking dish with cooking spray or butter. This will prevent the casserole from sticking.

      Sauté Vegetables: In a skillet over medium heat, add a drizzle of olive oil or a pat of butter. Sauté the diced onion until translucent, about 3-4 minutes. Add minced garlic and sauté for another minute until fragrant. Remove from heat and let cool slightly.

        Mix the Ingredients: In a large mixing bowl, combine the thawed hashbrowns, cottage cheese, shredded cheddar cheese, sour cream, sautéed onion and garlic mixture, beaten eggs, paprika, garlic powder, black pepper, and salt. Mix thoroughly until all ingredients are well incorporated.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly with a spatula.

            Bake the Casserole: Place the dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the edges are bubbling.

              Cool and Garnish: Once baked, remove the casserole from the oven and allow it to cool for about 10 minutes. Garnish with chopped green onions before serving.

                Serve and Enjoy: Cut into squares and serve warm, either as a side dish or a hearty breakfast option!
