1 cup cottage cheese

1 cup fresh spinach, finely chopped

1 cup all-purpose flour (or whole wheat flour)

1/2 cup rolled oats

1/4 cup grated Parmesan cheese

2 large eggs

1/4 cup milk (or a non-dairy alternative)

1/4 cup olive oil

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon garlic powder

1/2 teaspoon salt

A pinch of black pepper

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease with cooking spray.

    Combine Wet Ingredients: In a large mixing bowl, combine the cottage cheese, eggs, milk, olive oil, and honey. Use a whisk to blend until slightly smooth. The cottage cheese should still have some texture.

      Prepare Dry Ingredients: In a separate bowl, mix the all-purpose flour, rolled oats, baking powder, baking soda, garlic powder, salt, and black pepper.

        Mix Dry & Wet: Gradually add the dry mixture to the wet ingredients. Stir until just combined—do not overmix! The batter will be slightly lumpy.

          Fold in Spinach and Cheese: Gently fold in the chopped spinach and grated Parmesan cheese until evenly distributed throughout the batter.

            Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

              Bake: Bake in the preheated oven for 18-22 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                Cool: Allow the muffins to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.

                  Serve: Enjoy these muffins warm or at room temperature. They can be stored in an airtight container in the refrigerator for up to 5 days or frozen for longer storage.
