Ingredients
  

12 oz. uncooked pasta (penne or fusilli work well)

1 lb. ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with green chilies for extra kick)

1 cup corn (frozen or canned)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese

¼ cup fresh cilantro, chopped (for garnish)

Optional: Sliced jalapeños for spice

Instructions
 

Cook the Pasta:

    - In a large pot, boil salted water and cook the pasta according to package instructions until al dente. Drain and set aside.

      Cook the Meat:

        - In a large skillet over medium heat, add the ground beef (or turkey) and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat.

          Sauté Aromatics:

            - Add the diced onion and minced garlic to the skillet with the cooked meat. Sauté for about 3-4 minutes, or until the onion becomes translucent.

              Combine Ingredients:

                - Stir in the black beans, diced tomatoes (with their juices), corn, chili powder, cumin, smoked paprika, salt, and pepper. Mix well and let it simmer for about 5-7 minutes for the flavors to meld.

                  Mix in Pasta:

                    - Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce. Cook for another 2-3 minutes until heated through.

                      Cheese It Up:

                        - Remove from heat and sprinkle the shredded cheddar cheese over the top. Cover the skillet for a couple of minutes to melt the cheese.

                          Serve:

                            - Garnish with chopped cilantro and optional sliced jalapeños. Serve hot and enjoy your cowboy-inspired feast!
