24 oz. frozen cheese ravioli

2 tbsp olive oil

3 cloves garlic, minced

1 medium onion, diced

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1 tsp dried basil

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

1 cup heavy cream

1 cup vegetable broth

1/2 cup grated Parmesan cheese, plus more for topping

1 cup spinach, chopped

Salt and pepper to taste

Fresh basil, for garnish

Preheat Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and diced bell pepper; sauté for another 2-3 minutes.

      Add Tomatoes and Spices: Add the halved cherry tomatoes, dried basil, oregano, and red pepper flakes (if using). Cook for about 5-7 minutes until the tomatoes begin to soften.

        Create Creamy Sauce: Pour in the heavy cream and vegetable broth, stirring well to combine. Let it simmer for 5 minutes until slightly thickened. Stir in the chopped spinach, and season with salt and pepper to taste.

          Combine Ravioli: Gently fold in the frozen ravioli, ensuring they are well-coated with the creamy sauce.
