1 medium butternut squash, peeled and diced into 1-inch cubes

1 pound Italian sausage (sweet or spicy, your choice), casings removed

1 medium onion, chopped

3 cloves garlic, minced

4 cups low-sodium chicken or vegetable broth

1 cup carrot, sliced (about 2 medium carrots)

1 cup baby spinach

1 package (9 oz) cheese tortellini, fresh or frozen

1 teaspoon dried thyme

1 teaspoon dried sage

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Freshly grated Parmesan cheese, for serving

Fresh parsley, chopped, for garnish

Sauté the Sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage, breaking it into chunks. Cook for about 5-7 minutes until browned and cooked through. Use a slotted spoon to remove the sausage and set aside, leaving the rendered fat in the pot.

    Cook the Aromatics: In the same pot, add the chopped onion and carrot. Sauté for about 5 minutes until the onion is translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Add Butternut Squash: Stir in the diced butternut squash and let it cook for about 3-4 minutes. This helps to enhance the flavors.

        Pour in the Broth: Add the chicken or vegetable broth to the pot. Stir in the dried thyme, sage, red pepper flakes (if using), and season with salt and pepper to taste. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to a simmer and cover the pot. Let it cook for about 15-20 minutes, or until the butternut squash is tender.

            Add Tortellini: Stir in the cheese tortellini and cooked sausage. Allow the soup to return to a gentle boil and cook according to the tortellini package instructions (usually about 3-5 minutes).
