3 cups vegetable broth (or chicken broth)

1 tablespoon sugar (to balance acidity)

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for a kick)

Salt and pepper to taste

1 cup heavy cream or coconut cream (for a dairy-free option)

1/2 cup fresh basil leaves, chopped (plus more for garnish)

1 tablespoon balsamic vinegar (optional, for depth of flavor)

Instructions
 

Sauté Aromatics: In a large pot over medium heat, heat the olive oil. Add the diced onion and sauté until soft and translucent, about 5-7 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

    Cook Tomatoes: Pour in the canned diced tomatoes along with their juices. Stir in the vegetable broth, sugar, dried oregano, and red pepper flakes (if using). Bring the mixture to a simmer and let it cook for about 15 minutes, allowing the flavors to meld.

      Blend the Soup: After 15 minutes, use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the mixture in batches to a traditional blender and blend until smooth. Return the pureed soup to the pot.
