4 medium Yukon Gold potatoes, thinly sliced

2 large leeks, white and light green parts only, cleaned and sliced

2 cups heavy cream

1 cup whole milk

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon salt

½ teaspoon freshly ground black pepper

1 cup grated Gruyère cheese

½ cup grated Parmesan cheese

2 tablespoons unsalted butter, for greasing the baking dish

Fresh thyme or chives, for garnish (optional)

Instructions
 

Prep the Oven and Dish: Preheat your oven to 375°F (190°C). Butter a 9x13-inch baking dish with unsalted butter to prevent sticking.

    Sauté the Leeks: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the sliced leeks. Sauté for about 5-7 minutes until soft and fragrant. Add minced garlic and thyme, cooking for an additional minute. Remove from heat.

      Prepare the Cream Mixture: In a mixing bowl, combine the heavy cream, whole milk, salt, and black pepper. Whisk well until blended.

        Layer the Gratin: Arrange half of the sliced potatoes in an even layer at the bottom of the prepared baking dish. Sprinkle half of the sautéed leeks on top. Drizzle with a third of the cream mixture and sprinkle with half of the Gruyère cheese.

          Repeat the Layers: Layer the remaining potato slices over the first layer. Follow with the remaining leeks, half of the remaining cream mixture, and half of the Parmesan cheese. Finally, pour the last of the cream mixture over the top and sprinkle with the remaining Gruyère and Parmesan cheese.

            Bake the Gratin: Cover the dish loosely with aluminum foil and place it in the preheated oven. Bake for 40 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.

              Cool and Serve: Allow the gratin to cool for about 10 minutes before serving. This helps the layers set. Garnish with fresh thyme or finely chopped chives if desired.
