9 lasagna noodles

2 cups roasted pumpkin puree (or canned)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

1 tablespoon fresh sage, finely chopped (or 1 tsp dried sage)

2 cups spinach, chopped

2 cups marinara sauce

Salt and pepper to taste

Olive oil for drizzling

Pinch of nutmeg (optional)

Instructions
 

Cook the Noodles: In a large pot of salted boiling water, cook the lasagna noodles until al dente according to package instructions. Drain and lay them flat on a baking sheet to prevent sticking.

    Prepare the Filling: In a mixing bowl, combine the roasted pumpkin puree, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, chopped sage, chopped spinach, and a pinch of nutmeg if using. Season the mixture with salt and pepper to taste. Mix until well combined.

      Assemble the Rolls: Preheat your oven to 375°F (190°C). Take one lasagna noodle and spread a generous portion of the pumpkin filling along the length of the noodle. Carefully roll it up from one end to the other. Repeat with the remaining noodles and filling.

        Layer with Sauce: In a 9x13 inch baking dish, spread a layer of marinara sauce on the bottom. Place the lasagna rolls seam-side down in the dish. Pour the remaining marinara sauce over the top of the rolls and sprinkle the remaining mozzarella cheese on top. Drizzle with olive oil.

          Bake: Cover the baking dish with aluminum foil (to avoid sticking, you may spray the foil with cooking spray) and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

            Serve: Let the lasagna rolls cool for a few minutes before serving. Garnish with additional chopped sage or a sprinkling of Parmesan cheese if desired.
