For the Cookie Base:

1 ½ cups all-purpose flour

½ cup unsalted butter, softened

½ cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1 tsp vanilla extract

½ tsp baking soda

½ tsp baking powder

¼ tsp salt

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

1 tsp lemon juice

For the Toppings:

1 cup strawberries, sliced

1 cup kiwi, peeled and sliced

1 cup blueberries

1 cup banana, sliced

1 cup mandarin oranges (canned or fresh)

Mint leaves for garnish (optional)

1-2 tbsp honey or agave syrup (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    Make the Cookie Base: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add in the egg and vanilla extract; mix until well combined.

      In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until just combined. Do not overmix.

        Shape and Bake: Spread the cookie dough into a greased 12-inch pizza pan evenly, smoothing the top with a spatula. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. Remove from the oven and let it cool completely in the pan.

          Prepare the Cream Cheese Frosting: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, vanilla extract, and lemon juice, mixing until creamy and well combined.

            Once the cookie base is completely cooled, spread the cream cheese frosting evenly over the top using a spatula or the back of a spoon.

              Decorate your pizza with the sliced strawberries, kiwi, blueberries, banana slices, and mandarin oranges. Feel free to get creative with the arrangement!

                If desired, drizzle honey or agave syrup over the fruits for added sweetness, and garnish with fresh mint leaves.
