1 lb boneless, skinless chicken breasts

1 package (8 oz) cream cheese

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup chicken broth

1 medium onion, diced

3 cloves garlic, minced

1 cup frozen corn

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper to taste

Shredded cheddar cheese, for serving

Sliced green onions, for garnish

Jalapeño slices (optional), for garnish

Instructions
 

Prepare the Chicken: In a large skillet or pot, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper and cook for 5-6 minutes on each side until golden brown. Remove from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Combine Ingredients: Return the chicken to the skillet. Add the cooked onion and garlic, drained beans, diced tomatoes with green chilies, corn, chicken broth, taco seasoning, and smoked paprika. Stir well to combine.

        Cream Cheese Addition: Cut the cream cheese into cubes and place it on top of the mixture. Cover and simmer on low heat for about 20-25 minutes, or until the chicken is cooked through and tender.

          Shred the Chicken: Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the pot, stirring to combine it with the rest of the ingredients. Adjust seasoning with salt and pepper to taste.
