2 ripe avocados

4 large eggs

1 tablespoon lemon juice

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

4 slices of whole grain or sourdough bread

Optional toppings: red pepper flakes, cherry tomatoes, microgreens, or feta cheese

Instructions
 

Prepare the Avocado Spread:

    - Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.

      - Add lemon juice, olive oil, garlic powder, salt, and pepper.

        - Mash the ingredients together using a fork until creamy but still slightly chunky. Set aside.
