Creamy Beef Shells Casserole

12 jumbo pasta shells

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 can (15 oz) marinara sauce

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: In a large pot of boiling salted water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.

      Prepare the Beef Filling: In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes. Add the ground beef, breaking it up with a spoon, and cook until browned. Season with Italian seasoning, salt, and pepper. Once cooked, remove from heat.

        Mix the Cheese Filling: In a mixing bowl, combine the ricotta cheese, half of the mozzarella, half of the cheddar, and a pinch of salt and pepper. Mix until well combined.

          Assemble the Casserole: In a 9x13 inch baking dish, spread a layer of marinara sauce at the bottom. Stuff each cooked pasta shell with a generous amount of the cheese mixture and then top each shell with a spoonful of the beef mixture. Place the stuffed shells seam side up in the baking dish.

            Add Sauce and Cheese: Once all the shells are arranged in the dish, pour the remaining marinara sauce evenly over the top. Sprinkle the remaining mozzarella and cheddar cheese on top of the sauce.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
