Creamy Broccoli Almondine Pasta Bake

12 oz penne pasta

2 cups broccoli florets

1 cup sliced almonds, toasted

2 cups heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

4 cloves garlic, minced

1 medium onion, finely chopped

½ tsp nutmeg

1 tsp salt

½ tsp black pepper

2 tbsp olive oil

1 tbsp lemon juice

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package directions until al dente. This usually takes about 8-10 minutes. Drain and set aside.

      Blanch the Broccoli: In the same pot of boiling water, add the broccoli florets and cook for about 2-3 minutes until bright green and tender but still crisp. Drain and rinse with cold water to stop the cooking process.

        Make the Cream Sauce: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until softened and fragrant, about 3-4 minutes. Pour in the heavy cream, and bring to a gentle simmer. Stir in the nutmeg, salt, and black pepper, mixing well. Allow the sauce to simmer for about 5 minutes until it thickens slightly.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta, blanched broccoli, the cream sauce, toasted almonds, and half of the Parmesan cheese. Stir until everything is well-coated and evenly mixed.

            Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish. Sprinkle the shredded mozzarella cheese and the remaining Parmesan cheese evenly over the top.

              Bake: Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
