Creamy Butternut Squash Penne

12 oz penne pasta

2 cups butternut squash, roasted and pureed

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup vegetable broth (or chicken broth)

1 cup heavy cream

1 teaspoon dried sage

½ teaspoon ground nutmeg

Salt and pepper, to taste

½ cup grated Parmesan cheese (plus extra for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Roast the Squash:

    - Preheat your oven to 400°F (200°C).

      - Cut the butternut squash in half, scoop out the seeds, and place it cut-side down on a baking sheet. Roast for 30-40 minutes, until tender. Once cooled, scoop out the flesh and puree in a blender or food processor until smooth.

        Cook the Pasta:

          - In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

            Sauté Aromatics:

              - In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for 5-6 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

                Prepare the Sauce:

                  - Add the roasted butternut squash puree to the skillet with the onions and garlic. Stir in the vegetable broth and heavy cream. Mix well and bring to a gentle simmer.

                    Season:

                      - Add the dried sage, nutmeg, salt, and pepper to taste. Stir continuously for about 4-5 minutes until the sauce thickens slightly.

                        Combine Pasta and Sauce:

                          - Add the cooked penne pasta to the sauce in the skillet. Toss until the pasta is well-coated with the creamy butternut squash sauce.

                            Finish with Cheese:

                              - Stir in the grated Parmesan cheese until melted and combined. Adjust seasoning if needed.

                                Serve:
