1 cup coarse stone-ground grits

4 cups chicken broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

2 tablespoons butter

For the Cajun Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, diced

1 cup diced tomatoes (canned or fresh)

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Grits:

    - In a large saucepan, bring the chicken broth to a boil. Slowly whisk in the grits, reducing the heat to low. Cook for about 20-25 minutes, stirring occasionally until thickened and creamy.

      - Once the grits are cooked, stir in the heavy cream, cheddar cheese, butter, salt, and pepper. Keep them warm while you prepare the shrimp.

        Cook the Shrimp:

          - In a large skillet, heat the olive oil over medium-high heat. Season the shrimp with Cajun seasoning.

            - Add the shrimp to the skillet and cook for about 2-3 minutes until they turn pink and are just cooked through. Remove the shrimp from the skillet and set aside.

              Sauté the Vegetables:

                - In the same skillet, add the chopped onion and red bell pepper. Sauté for about 5 minutes until softened.

                  - Add the minced garlic and cook for an additional 1 minute until fragrant. Stir in the diced tomatoes and simmer for 3-4 minutes, allowing the flavors to meld.

                    Combine:
