Ingredients

8 ounces fettuccine pasta

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons unsalted butter

3 cloves garlic, minced

1 medium onion, chopped

1 bell pepper (red or green), diced

1 teaspoon Cajun seasoning (adjust to taste)

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for extra heat)

Salt and pepper, to taste

1 cup heavy cream

1 cup chicken or vegetable broth

1/2 cup grated Parmesan cheese

1/4 cup chopped fresh parsley, for garnish

Juice of 1 lemon

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

Prepare the Shrimp: Season the shrimp with Cajun seasoning, smoked paprika, salt, and pepper. In a large skillet over medium heat, add olive oil and 1 tablespoon of butter. Once hot, add the shrimp and sauté for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Sauté Vegetables: In the same skillet, add the remaining tablespoon of butter. Add the chopped onion and bell pepper, sautéing for about 4-5 minutes until the onions are translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Make the Sauce: Pour in the chicken or vegetable broth and bring it to a simmer. Allow it to reduce slightly for about 3 minutes. Stir in the heavy cream, Parmesan cheese, lemon juice, and adjust seasoning if necessary. Let the sauce simmer for another 2-3 minutes until it thickens.

Combine: Add the cooked fettuccine and sautéed shrimp back into the skillet. Toss everything together, ensuring that the pasta is well-coated with the creamy sauce. If the sauce appears too thick, add a little reserved pasta water to achieve the desired consistency.

Garnish and Serve: Remove from heat and garnish with chopped fresh parsley. Serve hot, and enjoy your creamy, spicy Cajun shrimp pasta!
