Ingredients

12 oz penne pasta

1 lb large shrimp, peeled and deveined

1 tablespoon Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 bell pepper (red or green), diced

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon lemon juice

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Season the Shrimp: In a medium bowl, combine the shrimp with Cajun seasoning, ensuring they’re well coated. Set aside to marinate for about 10 minutes.

Sauté Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and diced bell pepper. Sauté for 3-4 minutes until softened.

Add Garlic and Tomatoes: Stir in the minced garlic and cherry tomatoes. Cook for another 2-3 minutes until the tomatoes start to soften and release their juices.

Cook the Shrimp: Push the vegetables to one side of the skillet and add the marinated shrimp. Cook for about 2-3 minutes on each side until they turn pink and opaque.

Create the Sauce: Lower the heat, then pour in the heavy cream and sprinkle the Parmesan cheese. Stir to combine everything, allowing the cheese to melt and the sauce to thicken. Add lemon juice, salt, and pepper to taste.

Combine Pasta and Sauce: Gently fold the cooked penne into the creamy shrimp and vegetable mixture. Toss until the pasta is well-coated with the sauce.

Garnish and Serve: Remove from heat and garnish with freshly chopped parsley. Serve immediately, enjoying the blend of creamy spices and succulent shrimp.
