Ingredients

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 medium carrot, diced

2 celery stalks, diced

4 cups vegetable or chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup diced assorted cured meats (salami, prosciutto, chorizo)

1 cup assorted cheeses, diced (cheddar, gouda, brie)

1/2 cup chopped pickles or cornichons

1/2 cup mixed olives, pitted and halved

Fresh herbs for garnish (parsley or chives)

Instructions

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes or until the vegetables are soft and the onions are translucent.

Add Aromatics: Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Build the Soup: Pour in the vegetable or chicken broth, and add the dried thyme, smoked paprika, salt, and pepper. Bring the mixture to a simmer and let it cook for about 10 minutes.

Incorporate the Cream: Reduce the heat to low and stir in the heavy cream. Allow the soup to warm through, without boiling, for another 5 minutes.

Mix in Charcuterie Ingredients: Gently fold in the diced cured meats, assorted cheeses, pickles, and olives. Let them warm in the soup for a few minutes, allowing the cheese to start melting and the flavors to meld.

Serve and Garnish: Ladle the creamy charcuterie board soup into bowls. Garnish with freshly chopped herbs and an additional sprinkle of smoked paprika if desired.

Enjoy: Serve hot with fresh bread or crackers for dipping, channeling the flavors of a classic charcuterie board in every bite!
