1 medium onion, diced

4 cups vegetable or chicken broth

1 cup whole milk (or creamy alternative)

1 ½ cups sharp cheddar cheese, grated

2 tablespoons olive oil

Salt and pepper to taste

½ teaspoon smoked paprika (optional)

Fresh chives or parsley for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Cauliflower: Add the chopped cauliflower to the pot, stirring to combine with the onions and garlic. Cook for about 5 minutes, allowing the cauliflower to soften slightly.

      Add Broth: Pour in the vegetable or chicken broth, ensuring the cauliflower is fully submerged. Bring to a boil, then reduce the heat and let it simmer for 20 minutes, or until the cauliflower is tender.

        Blend the Soup: Once the cauliflower is cooked, use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a blender and puree until smooth.

          Make it Creamy: Stir in the whole milk and grated cheddar cheese, mixing until the cheese is fully melted and the soup is creamy. If the soup is too thick, add more broth or milk until you reach your desired consistency.
