8 oz fettuccine pasta

2 tablespoons olive oil

2 boneless, skinless chicken breasts (about 1 lb), sliced into strips

Salt and pepper, to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 cup fresh spinach (optional)

Fresh parsley, chopped (for garnish)

Extra Parmesan cheese, for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Season the sliced chicken breasts with salt and pepper. Add the chicken to the skillet and cook for about 5-6 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Lower the heat and pour in the heavy cream, stirring continuously. Allow the cream to heat up until it begins to simmer; do not boil.

        Add Cheese and Seasonings: Gradually stir in the grated Parmesan cheese and Italian seasoning, mixing until the cheese melts and the sauce is rich and creamy. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.

          Combine Pasta and Chicken: Return the cooked chicken to the skillet, and then add the drained fettuccine and fresh spinach (if using). Toss everything together until well coated with the sauce. Cook for an additional 2-3 minutes until the spinach wilts.
