2 cups rotini or penne pasta

2 cups cooked, shredded chicken (rotisserie chicken works great!)

2 cups broccoli florets (fresh or frozen)

1 cup sharp cheddar cheese, shredded

1 cup cream cheese, softened

1 cup chicken broth

1/2 cup sour cream or Greek yogurt

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

2 tablespoons olive oil or butter

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

      Prepare Broccoli: If using fresh broccoli, blanch the florets in boiling water for 2-3 minutes until bright green and tender-crisp. If using frozen, simply thaw them in the microwave. Drain and set aside.

        Make the Creamy Sauce: In a large mixing bowl, combine the softened cream cheese, chicken broth, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until smooth and creamy. Stir in the sour cream for extra richness.

          Combine Ingredients: In the same bowl, mix the cooked pasta, shredded chicken, blanched broccoli, and half of the cheddar cheese. Pour the creamy sauce over the mixture and stir until everything is well coated.

            Prepare for Baking: Transfer the pasta mixture into a greased 9x13 inch baking dish. Spread it evenly.

              Add Toppings: Sprinkle the remaining cheddar cheese over the top. If you like a crunchy topping, mix breadcrumbs with olive oil or melted butter and sprinkle them over the cheese.
