1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

1 cup cooked white rice (or any grain of your choice)

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken pieces, season with salt, pepper, paprika, garlic powder, and onion powder. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent and fragrant. If using fresh broccoli, add it now and cook for an additional 3-4 minutes until slightly tender. If using frozen broccoli, add it in the next step with other ingredients.

      Make the Cream Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer. Add the cooked rice and stir until well mixed. If using frozen broccoli, add it at this point and cook for another 5 minutes to ensure it's heated through and the flavors meld.

        Combine Ingredients: Return the cooked chicken back into the skillet. Stir well to combine everything thoroughly. Allow the mixture to simmer for an additional 2-3 minutes so the flavors infuse into the sauce.

          Add Cheese: Sprinkle the shredded cheddar cheese over the top of the skillet mixture. Cover the skillet with a lid and let it cook for another 2 minutes until the cheese is melted and bubbly.
