Ingredients

1 lb (450g) boneless, skinless chicken breasts, diced

1 cup corn kernels (fresh, frozen, or canned)

1 medium yellow onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

4 cups chicken broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: 1 tablespoon fresh lemon juice for brightness

Instructions

Prepare Ingredients: Start by gathering all your ingredients. Dice the chicken, carrots, and celery; finely chop the onion and mince the garlic.

Sauté Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until they become translucent. Stir in the garlic, carrots, and celery; cook for an additional 5 minutes until softened.

Add Chicken: Increase the heat to medium-high and add the diced chicken to the pot. Season with salt, pepper, thyme, and smoked paprika. Cook, stirring frequently, until the chicken is browned and cooked through, about 5-7 minutes.

Incorporate Corn and Broth: Stir in the corn kernels, followed by the chicken broth. Bring the mixture to a gentle boil, then reduce the heat to simmer for about 10-15 minutes. This allows the flavors to meld and the carrots to become tender.

Add Cream: Once the vegetables are tender, pour in the heavy cream and stir well to combine. If you prefer a slightly tangy flavor, add the fresh lemon juice at this stage. Heat through for another 5 minutes, adjusting seasoning if necessary.

Blend (Optional): For a creamier texture, you can blend a portion of the soup using an immersion blender, or transfer part of the soup to a blender. Blend until smooth and return it to the pot for a luscious consistency.

Serve: Ladle the creamy chicken and corn soup into bowls, garnishing with fresh parsley for added color and flavor. Serve warm with crusty bread or crackers if desired.
