Creamy Chicken and Mushroom Skillet Pasta

8 oz (225g) pasta (penne or fettuccine)

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups (150g) sliced mushrooms (cremini or white)

1 small onion, finely chopped

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

    Sauté Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with salt, pepper, and half of the oregano and thyme. Cook for 5-7 minutes, or until the chicken is golden brown and cooked through. Remove from the skillet and set aside.

      Cook Vegetables: In the same skillet, add the chopped onion and cook for 2-3 minutes until softened. Add the sliced mushrooms and the remaining oregano and thyme. Sauté for 5 minutes, or until the mushrooms are tender and browned. Stir in the minced garlic and cook for an additional 1 minute.

        Make Sauce: Pour in the chicken broth, scraping the bottom of the skillet to release any flavorful bits. Allow it to simmer for 2-3 minutes. Reduce the heat to low, then stir in the heavy cream and Parmesan cheese, mixing until fully incorporated.

          Combine: Add the cooked chicken back into the skillet along with the drained pasta. Toss everything together in the creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency. Adjust seasoning with additional salt and pepper as necessary.

            Serve: Remove from heat and garnish with freshly chopped parsley. Serve immediately, enjoying the rich and creamy flavors!
