Creamy Chicken and Rice Skillet Dinner

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

1 medium onion, diced

3 cloves garlic, minced

1 cup uncooked long-grain rice

4 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon paprika

1/2 cup frozen peas

1/2 cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the uncooked rice to the skillet and stir to coat it with the oil, onion, and garlic. Toast the rice for about 2 minutes.

        Pour in the chicken broth, heavy cream, dried thyme, and paprika. Bring the mixture to a gentle boil. Reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.

          Stir in the cooked chicken, frozen peas, and grated Parmesan cheese. Mix well and allow everything to heat through for about 5 minutes, adjusting seasoning with salt and pepper to taste.

            Remove from heat, garnish with fresh chopped parsley, and serve warm straight from the skillet!
