Creamy Chicken and Spinach Pasta Bake

2 cups penne pasta

2 tablespoons olive oil

1 lb (450g) chicken breast, diced

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

4 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup heavy cream

1/2 cup grated Parmesan cheese, plus extra for topping

1 1/2 cups shredded mozzarella cheese

Salt and pepper to taste

Fresh basil, for garnish (optional)

Instructions
 

Preheat the oven: Start by preheating your oven to 375°F (190°C).

    Cook the pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté the chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and season with salt, pepper, Italian seasoning, and red pepper flakes if using. Cook for 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

        Cook the spinach and garlic: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Remove from heat.

          Make the creamy sauce: In a large mixing bowl, combine the ricotta cheese, heavy cream, and grated Parmesan cheese. Mix until smooth. Season with a pinch of salt and pepper.

            Combine ingredients: In the bowl with the creamy sauce, add the cooked penne pasta, sautéed chicken, and spinach. Stir until everything is well coated with the sauce.

              Assemble the bake: Pour the pasta mixture into a greased 9x13 inch (23x33 cm) baking dish. Sprinkle the shredded mozzarella cheese evenly over the top. Add some extra grated Parmesan cheese for an extra cheesy crust.
