Creamy Chicken and Spinach Pasta Bake

12 oz (340g) penne pasta

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 lb (450g) boneless, skinless chicken breasts, diced

4 cups fresh spinach, roughly chopped

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese, divided

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta: Preheat your oven to 375°F (190°C). In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced onions and sauté for 3-4 minutes until they become translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Add Chicken and Spinach: Add the diced chicken breasts to the skillet, and season with Italian seasoning, red pepper flakes, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through. Mix in the chopped spinach and allow it to wilt, about 2-3 minutes.

        Make the Creamy Sauce: Reduce the heat to low. Add the heavy cream, chicken broth, cream cheese, and half of the Parmesan cheese (1/2 cup) to the skillet. Stir until everything is well combined and creamy. Taste and adjust seasoning if necessary.

          Combine with Pasta: In a large mixing bowl, combine the cooked penne pasta and the creamy chicken and spinach mixture. Gently toss until the pasta is well coated in the sauce.

            Prepare for Baking: Transfer the pasta mixture into a greased 9x13-inch (or similar-sized) baking dish. Spread it evenly, then top with the remaining half of the Parmesan cheese and the mozzarella cheese.
