12 oz (340g) pasta of your choice (fettuccine or penne work great)

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

5 cups fresh spinach

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Optional: Red pepper flakes for added heat

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the bite-sized chicken pieces and season with salt, pepper, and Italian seasoning. Sauté until the chicken is golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Garlic and Spinach: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant. Add the fresh spinach and cook until wilted, stirring constantly, about 2-3 minutes.

        Make the Creamy Sauce: Pour the chicken broth and heavy cream into the skillet with the spinach and garlic. Stir well to combine and let it simmer for about 3-4 minutes until slightly thickened.

          Add the Chicken and Cheese: Return the cooked chicken to the skillet and stir in the grated Parmesan cheese. Mix until the cheese has melted and the sauce is creamy. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency.

            Combine with Pasta: Add the drained pasta into the skillet, tossing it in the creamy sauce until well coated. Adjust seasoning with salt, pepper, and red pepper flakes, if desired.
