8 oz penne pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 medium onion, diced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent. Add the cherry tomatoes and cook for another 2 minutes until they start to soften.

        Make the Cream Sauce: Lower the heat and pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Allow it to simmer for 2-3 minutes. Add the heavy cream and bring to a gentle simmer.

          Combine Ingredients: Return the cooked chicken to the skillet, along with the chopped spinach and drained penne. Stir in the grated Parmesan cheese until the sauce is creamy and everything is well combined. Allow it to cook for another 2-3 minutes until the spinach is wilted.

            Serve: Taste and adjust seasoning if necessary. Serve hot, garnished with fresh basil leaves if desired.
