8 oz rotini pasta (or your favorite pasta)

2 tbsp olive oil

1 lb boneless, skinless chicken breasts, diced

4 cloves garlic, minced

1 medium onion, finely chopped

5 oz fresh spinach

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Red pepper flakes (optional, for a little heat)

Fresh basil or parsley, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the rotini according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the diced chicken, seasoning with salt and pepper. Cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

        Add Spinach: Stir in the fresh spinach, cooking just until wilted, about 2 minutes.

          Make the Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer. Add the Italian seasoning and adjust with salt and pepper to taste.

            Combine Ingredients: Return the cooked chicken to the skillet along with the drained pasta. Stir well to coat everything in the creamy sauce. Gradually add in the grated Parmesan cheese, mixing until smooth and creamy. If the sauce is too thick, feel free to add a splash of chicken broth or water to reach your desired consistency.
