12 oz (340g) penne pasta

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, diced

5 oz (140g) fresh spinach, chopped

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken to the skillet, season with salt, pepper, and Italian seasoning. Cook until the chicken is golden brown and cooked through, about 7-8 minutes. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for about 3-4 minutes or until the onion becomes translucent and fragrant.

        Add Spinach: Stir in the chopped spinach and cook for 2-3 minutes until wilted.

          Create the Sauce: Reduce the heat to low and pour in the heavy cream. Stir well to combine, and allow it to simmer for about 2-3 minutes. Add the grated Parmesan cheese and stir until melted and creamy. If desired, add red pepper flakes for a bit of heat.
