4 cups fresh watermelon, cubed

1 cup crumbled feta cheese

½ cup Greek yogurt

2 tablespoons honey

1 tablespoon fresh mint, chopped (plus extra for garnish)

1 tablespoon lime juice

¼ teaspoon black pepper

Pinch of salt

¼ cup toasted pistachios, roughly chopped

Lime wedges for serving

Instructions
 

In a large mixing bowl, combine the Greek yogurt, honey, lime juice, black pepper, and a pinch of salt. Mix until well blended and creamy.

    In another bowl, gently mix the watermelon cubes with the chopped fresh mint, ensuring the mint is distributed evenly without crushing the watermelon.

      In individual serving bowls or one large serving dish, layer the watermelon mixture and then spoon dollops of the creamy feta yogurt mixture on top.

        Sprinkle crumbled feta over the top of the creamy layer for a beautiful presentation.
