Ingredients

2 pounds russet potatoes, peeled and cut into cubes

4 cloves garlic, peeled and minced

1/2 cup unsalted butter

1 cup heavy cream (or half-and-half for a lighter version)

Salt and black pepper, to taste

Fresh chives or parsley, chopped (for garnish)

Optional: 1/2 cup sour cream or cream cheese for extra creaminess

Instructions

Prep the Potatoes: Start by peeling and cubing the russet potatoes into even pieces. This ensures they cook uniformly.

Boil the Potatoes: In a large pot, add the cubed potatoes and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Once boiling, reduce to a simmer and cook for about 15-20 minutes or until the potatoes are fork-tender.

Cook the Garlic: While the potatoes are cooking, heat a small saucepan over medium heat. Add the butter and minced garlic, cooking gently until the garlic is fragrant but not browned, about 2-3 minutes. Remove from heat and set aside.

Drain and Mash: Once the potatoes are cooked, drain them thoroughly in a colander. Return them to the pot and let them steam for a minute to release excess moisture. Using a potato masher or a ricer, mash the potatoes to your desired consistency.

Combine Ingredients: Pour in the melted garlic butter mixture, followed by the heavy cream. Stir vigorously until the mashed potatoes are creamy and fully combined. If you’re opting for sour cream or cream cheese, mix that in for an added layer of flavor.

Season: Season the mashed potatoes with salt and black pepper to taste, adjusting according to your preference.

Serve: Transfer the creamy garlic mashed potatoes to a serving bowl. Garnish with freshly chopped chives or parsley for a pop of color. Enjoy!
