Ingredients

1 cup orzo pasta

2 cups chicken broth (or vegetable broth for a vegetarian option)

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup frozen peas (thawed)

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/4 teaspoon red pepper flakes (optional)

Chopped fresh parsley for garnish

Instructions

Cook the Orzo: In a medium saucepan, bring the chicken broth to a boil. Add the orzo and cook according to the package instructions, usually about 8-10 minutes, until al dente. Drain and set aside.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to prevent burning.

Combine Ingredients: Add the cooked orzo to the skillet with the onions and garlic. Stir to combine, then add the thawed peas.

Make it Creamy: Pour in the heavy cream and stir gently to incorporate. Allow the mixture to simmer for about 2-3 minutes, allowing it to thicken slightly.

Cheesy Goodness: Remove the skillet from heat and stir in the grated Parmesan cheese. Mix until the cheese has melted and the orzo is well coated. Season with salt, black pepper, thyme, and red pepper flakes (if using).

Serve: Once everything is well combined and creamy, garnish with chopped fresh parsley before serving. Enjoy your delicious Creamy Garlic Parmesan Orzo with Peas!
