Ingredients

1 cup coarse cornmeal (polenta)

4 cups vegetable broth (or chicken broth for a non-vegetarian option)

1 cup heavy cream

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

3 tablespoons unsalted butter (or olive oil for a vegan option)

2 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme leaves

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Broth: In a large saucepan, bring the vegetable or chicken broth to a gentle boil over medium heat.

Cook the Polenta: Gradually whisk in the cornmeal, stirring constantly to prevent lumps from forming. Lower the heat to a simmer and continue stirring for about 10-15 minutes until the polenta thickens and starts pulling away from the sides of the pan.

Add Cream and Butter: Stir in the heavy cream and butter (or olive oil if making vegan). Mix well until the butter has melted and the polenta has a smooth and creamy consistency.

Infuse with Herbs and Cheese: Add the minced garlic, chopped rosemary, thyme, and grated Parmesan cheese. Stir until everything is well incorporated. Taste and season with salt and pepper as needed.

Serve: Spoon the creamy polenta into bowls, garnishing with freshly chopped parsley. For an extra flavor boost, drizzle a little olive oil on top before serving.

Enjoy: Pair this creamy herb polenta with roasted vegetables, grilled meats, or enjoy it on its own as a rich and comforting dish.
