Ingredients

3 cups cooked chicken, shredded (you can use rotisserie chicken for convenience)

1 cup cooked white rice (or quinoa for a healthier option)

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup diced jalapeños (fresh or pickled, adjust to taste)

1 cup shredded cheddar cheese, divided

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon taco seasoning (optional for extra flavor)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup breadcrumbs (for topping)

Fresh cilantro, chopped (for garnish)

Instructions

Preheat the oven: Start by preheating your oven to 350°F (175°C).

Prepare the base: In a large mixing bowl, combine the shredded chicken, cooked rice, cream of chicken soup, sour cream, diced jalapeños, 1/2 cup of the shredded cheddar cheese, garlic powder, onion powder, taco seasoning (if using), salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Assemble the casserole: Grease a 9x13 inch baking dish with cooking spray or a little olive oil. Transfer the chicken mixture to the prepared baking dish and spread it out evenly.

Add toppings: Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the chicken mixture. Then, evenly distribute the breadcrumbs on top for a crunchy finish.

Bake: Place the casserole in the preheated oven and bake for about 30-35 minutes, or until the cheese is bubbly and the breadcrumbs are golden brown.

Garnish and serve: Once done, remove the casserole from the oven. Let it sit for about 5-10 minutes before serving. Garnish with freshly chopped cilantro for a pop of color and added flavor.

Enjoy: Dish out generous portions of the creamy jalapeño chicken casserole and enjoy your comforting, flavorful meal!
