Creamy Lemon Garlic Risotto

1 cup Arborio rice

4 cups low-sodium chicken or vegetable broth

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup dry white wine

1/2 cup freshly grated Parmesan cheese

1/2 cup heavy cream

2 tablespoons unsalted butter

Zest of 1 lemon

Juice of 1 lemon

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Broth: In a saucepan, bring the chicken or vegetable broth to a simmer over medium heat. Keep it on low heat to stay warm throughout the cooking process.

    Sauté Onions and Garlic: In a large skillet or pan, heat the olive oil and 1 tablespoon of butter over medium heat. Once hot, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Toast the Rice: Stir in the Arborio rice, making sure to coat it well with the oil and butter mixture. Cook for about 2 minutes, stirring frequently until the rice grains start to become slightly translucent.

        Add Wine: Pour in the dry white wine and stir continuously until the wine is mostly absorbed by the rice.

          Incorporate Broth Gradually: Begin adding the warm broth to the rice mixture, one ladleful at a time. Stir gently and frequently, allowing the rice to absorb the broth before adding the next ladle. This process helps release the starches, creating a creamy texture. Continue this process for about 18-20 minutes, or until the rice is al dente.

            Finish with Cream and Cheese: Once the rice is cooked to your desired texture, remove it from the heat. Stir in the heavy cream, remaining tablespoon of butter, and the grated Parmesan cheese. Mix well until everything is fully incorporated and creamy.

              Add Lemon Zest and Juice: Add the lemon zest and juice to the risotto. Stir thoroughly to combine. Season with salt and freshly ground black pepper to taste.

                Garnish and Serve: Serve the risotto hot in bowls, garnishing with fresh chopped parsley and an additional sprinkle of Parmesan cheese, if desired.
