1 cup couscous

1 1/4 cups vegetable broth

1/2 cup cream cheese, softened

1/4 cup plain Greek yogurt

1 lemon (zest and juice)

1/4 cup fresh parsley, finely chopped

1/4 cup fresh dill, chopped

1/4 teaspoon garlic powder

Salt and pepper, to taste

1/2 cup cherry tomatoes, halved (for garnish)

Olive oil (for drizzling)

Optional: 1/4 cup toasted pine nuts or slivered almonds (for garnish)

Instructions
 

Prepare the Couscous: In a medium saucepan, bring the vegetable broth to a boil. Remove from heat and stir in the couscous. Cover and let it sit for about 5 minutes until the couscous absorbs the broth and becomes fluffy.

    Mix Creamy Base: In a separate bowl, combine the softened cream cheese, Greek yogurt, lemon zest, lemon juice, garlic powder, salt, and pepper. Mix until creamy and smooth.

      Fluff and Combine: Once the couscous is ready, fluff it with a fork. Add the creamy mixture to the couscous and stir in the fresh parsley and dill. Adjust seasoning with additional salt and pepper if needed.

        Assemble the Cups: Using a muffin tin, place cupcake liners or simply grease the muffin tin cups. Spoon the creamy lemon herb couscous mixture into each cup, pressing down gently to pack it in.

          Chill: Place the muffin tin in the refrigerator for at least 30 minutes to let the cups firm up.

            Serve: After chilling, pop the couscous cups out of the muffin tin. Arrange on a serving platter, topping each cup with halved cherry tomatoes, a drizzle of olive oil, and a sprinkle of toasted pine nuts or slivered almonds for extra crunch.
