Ingredients

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 cup vegetable broth (or chicken broth for non-vegetarian)

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon

1 cup grated Parmesan cheese

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Extra lemon wedges (for serving)

Instructions

Cook the Orzo: In a large pot of boiling salted water, add the orzo pasta. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain the pasta and set aside.

Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant. Be careful not to burn the garlic.

Create the Cream Sauce: Pour in the vegetable broth and bring it to a simmer. Let it reduce for about 3-4 minutes. Then stir in the heavy cream, lemon zest, and lemon juice, mixing well.

Add the Pasta: Once the sauce is slightly thickened (about 3-5 minutes), add the cooked orzo to the skillet. Stir to combine everything, allowing the orzo to absorb some of the creamy sauce.

Incorporate the Cheese: Gradually stir in the grated Parmesan cheese, mixing until completely melted and creamy. Season with salt and pepper to taste.

Garnish and Serve: Remove from heat, sprinkle chopped fresh parsley on top, and serve hot with additional lemon wedges on the side for an extra zesty kick.
