1 medium cauliflower, chopped into florets

2 cups fresh spinach, washed

1 medium onion, diced

3 cloves garlic, minced

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer taste)

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley for garnish

Sauté the Base: In a large pot, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Cauliflower: Add the cauliflower florets to the pot and stir for a minute, allowing them to mix with the onion and garlic. Sprinkle in ground cumin and paprika, stirring to coat the cauliflower evenly.

      Add the Broth: Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 10-12 minutes, or until the cauliflower is tender.

        Blend the Soup: Remove the pot from the heat. Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, carefully transfer the mixture to a blender in batches for a smoother consistency. Return the blended soup to the pot.

          Incorporate Spinach and Cream: Stir in the fresh spinach and coconut milk. Cook on low heat for another 3-5 minutes, just until the spinach is wilted and the soup is heated through.

            Season Everything: Add salt, pepper, and lemon juice to taste. Adjust seasonings as necessary, balancing flavors to your preference.
