Creamy Mushroom and Asparagus Chicken Penne

8 oz penne pasta

2 tablespoons olive oil

1 pound chicken breast, diced

8 oz mushrooms, sliced (button or cremini)

1 cup asparagus, cut into 1-inch pieces

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

1 cup heavy cream

½ cup chicken broth

¾ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken breast, season with salt and pepper, and sauté until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the sliced mushrooms and asparagus. Cook until the mushrooms are browned and the asparagus is tender, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

        Make the Sauce: Sprinkle the dried thyme, Italian seasoning, and red pepper flakes (if using) over the vegetables. Pour in the heavy cream and chicken broth, stirring well to combine. Bring to a gentle simmer and let it cook for 3-5 minutes, allowing the sauce to thicken slightly.

          Combine Ingredients: Add the cooked chicken back into the skillet along with the cooked penne pasta. Stir to combine, adding reserved pasta water if needed to achieve the desired consistency. Gradually mix in the grated Parmesan cheese and stir until the cheese is melted and the sauce is creamy.
