Creamy Mushroom and Goat Cheese Tarts

1 sheet of puff pastry (thawed)

1 cup of mushrooms (mix of cremini and shiitake, sliced)

1 small onion (finely chopped)

2 cloves of garlic (minced)

1 cup of heavy cream

4 oz. goat cheese (crumbled)

1 tablespoon olive oil

1 teaspoon fresh thyme (chopped)

1 teaspoon fresh parsley (chopped)

Salt and pepper (to taste)

1 egg (beaten, for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry to about 1/8 inch thick. Cut into squares or circles, approximately 4x4 inches or 4-inch diameter, depending on your desired tart size. Place them on a lined baking sheet.

      Sauté the Vegetables: In a skillet over medium heat, add olive oil. Once hot, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms. Sauté until the mushrooms are browned and have released their moisture, about 5-7 minutes. Season with salt, pepper, and fresh thyme.

        Make the Cream Mixture: In a bowl, whisk together the heavy cream, crumbled goat cheese, and parsley. Mix until well combined.

          Combine Filling: Once the mushrooms have cooled slightly, stir them into the cream and goat cheese mixture until evenly distributed.

            Assemble the Tarts: Use a knife to score a border about ½ inch inside the edge of each pastry square/circle (do not cut all the way through). This will create a border that puffs up during baking. Spoon the mushroom and goat cheese filling into the center of each pastry, keeping it within the scored border.

              Apply Egg Wash: Brush the edges of the tarts with the beaten egg to give them a golden color when baked.

                Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes or until the pastry is golden brown and puffed.

                  Serve: Allow the tarts to cool for a few minutes before serving. They can be served warm or at room temperature.
