Creamy Peanut Sesame Noodles

8 oz (225g) spaghetti or rice noodles

1/4 cup peanut butter (preferably creamy)

3 tbsp soy sauce

2 tbsp sesame oil

2 tbsp rice vinegar

1 tbsp honey or maple syrup

1-2 garlic cloves, minced

1 tsp grated fresh ginger

1/2 tsp red pepper flakes (adjust to taste)

1 cup snow peas, trimmed

1 cup carrots, julienned

1/4 cup chopped green onions

2 tbsp sesame seeds, toasted

Fresh cilantro for garnish (optional)

Instructions
 

Cook the noodles: Bring a large pot of salted water to a boil. Add the spaghetti or rice noodles and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

    Make the sauce: In a medium bowl, whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, honey or maple syrup, minced garlic, grated ginger, and red pepper flakes until smooth and well combined.

      Sauté the vegetables: In a large skillet over medium heat, add a splash of water or a teaspoon of oil. Sauté the snow peas and carrots for about 3-4 minutes, until they are just tender but still crisp. Remove from heat.

        Combine noodles and sauce: In a large mixing bowl, combine the drained noodles with the sautéed vegetables. Pour the creamy peanut sauce over the noodles and toss gently until everything is well coated.

          Serve: Divide the noodles among serving plates. Top with chopped green onions, toasted sesame seeds, and a sprinkle of fresh cilantro if desired. Serve cold or at room temperature for a delightful meal.
