8 ounces rotini or fusilli pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, diced (any color)

1 cup sweet corn (canned or frozen)

1/2 cup red onion, finely chopped

1/2 cup grated cheddar cheese

1/2 cup cooked bacon, crumbled (optional)

1 cup ranch dressing

1/2 cup sour cream

2 tablespoons apple cider vinegar

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and black pepper to taste

Fresh parsley or chives for garnish (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the rotini or fusilli pasta according to package instructions until al dente. Drain the pasta and rinse it under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the pasta is cooling, chop the cherry tomatoes, cucumber, bell pepper, and red onion. If you’re using canned corn, drain it well.

      Make the Creamy Ranch Dressing: In a medium bowl, whisk together the ranch dressing, sour cream, apple cider vinegar, fresh dill, salt, and black pepper until smooth and well combined.

        Combine the Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, corn, red onion, cheddar cheese, and crumbled bacon (if using).

          Dress the Salad: Pour the creamy ranch dressing over the pasta and vegetable mixture. Gently toss until everything is well coated in the dressing.
