Creamy Roasted Garlic Alfredo Pasta

12 oz fettuccine pasta

1 whole head of garlic

2 tablespoons olive oil

1 cup heavy cream

1 cup freshly grated Parmesan cheese

4 tablespoons unsalted butter

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Pinch of nutmeg (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the whole head of garlic, drizzle with 1 tablespoon of olive oil, and wrap it in aluminum foil. Roast in the oven for 30-35 minutes, or until the cloves are soft and caramelized. Once done, allow it to cool slightly, then squeeze out the roasted cloves into a bowl and mash them into a paste.

    Cook the Pasta: While the garlic is roasting, bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

      Prepare the Alfredo Sauce: In a large skillet over medium heat, melt the butter. Add the mashed roasted garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream, stirring continuously. Bring the mixture to a gentle simmer.

        Incorporate the Cheese: Gradually whisk in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add some reserved pasta water, one tablespoon at a time, until you reach the desired consistency.

          Combine Pasta and Sauce: Add the cooked fettuccine to the skillet with the sauce. Toss gently until the pasta is evenly coated. Season with salt, black pepper, and nutmeg (if using) to taste.

            Serve: Plate the creamy roasted garlic Alfredo pasta and garnish with chopped fresh parsley. Add extra Parmesan cheese on top if desired.
