12 oz fresh or frozen cheese tortellini

2 large red bell peppers

1 tablespoon olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup vegetable or chicken broth

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

Roast the Peppers: Preheat your oven to 425°F (220°C). Place the red bell peppers on a baking sheet and drizzle with olive oil. Roast for about 25-30 minutes, or until the skin is blistered and charred. Remove from the oven and place the peppers in a bowl; cover with plastic wrap for 10 minutes. This helps to steam them for easier peeling.

    Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions, typically around 3-5 minutes for fresh tortellini or 6-8 minutes for frozen. Once cooked, drain and set aside.

      Prepare the Sauce: While the tortellini is cooking, peel the roasted peppers and remove the seeds. In a blender, combine the roasted peppers, garlic, heavy cream, and broth. Blend until smooth.
