Creamy Roasted Tomato Pasta

2 pints cherry tomatoes

2 tablespoons olive oil

Salt and pepper, to taste

4 cloves of garlic, minced

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

1 cup heavy cream

½ cup grated Parmesan cheese

12 oz spaghetti or your pasta of choice

Fresh basil leaves, for garnish

Additional Parmesan cheese, for serving

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Roast the Tomatoes: On a baking sheet, toss the cherry tomatoes with olive oil, salt, pepper, minced garlic, oregano, and red pepper flakes. Spread them out in a single layer and roast in the preheated oven for about 25-30 minutes, or until the tomatoes are blistered and caramelized.

      Cook the Pasta: While the tomatoes roast, bring a large pot of salted water to boil. Add the spaghetti and cook according to package instructions until al dente. Drain the pasta, reserving about 1 cup of the pasta cooking water.

        Prepare the Cream Sauce: In a large skillet over medium heat, add the roasted tomatoes along with all the juices from the baking sheet. Reduce the heat slightly and gently press down the tomatoes with a wooden spoon to release more of their juices. Stir in the heavy cream and grated Parmesan cheese, combining until the sauce is smooth. If the sauce is too thick, gradually add some reserved pasta water to reach the desired consistency.

          Combine Pasta and Sauce: Add the cooked spaghetti to the skillet with the creamy tomato mixture. Toss until the pasta is well coated with the sauce. If needed, adjust the seasoning with additional salt and pepper.

            Serve: Divide the creamy roasted tomato pasta among serving plates. Garnish with fresh basil leaves and sprinkle with extra Parmesan cheese. Serve immediately while warm.
