Creamy Spaghetti Squash Bake

1 medium spaghetti squash

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup fresh spinach, chopped

2 cloves garlic, minced

1 egg

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional, for a kick)

Salt and pepper, to taste

1/4 cup fresh basil leaves, chopped (for garnish)

Instructions
 

Prepare the Spaghetti Squash:

    - Preheat your oven to 400°F (200°C).

      - Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, salt, and pepper. Place cut-side down on a baking sheet lined with parchment paper.

        - Roast in the oven for about 40-50 minutes, or until the flesh is tender and can be easily shredded with a fork. Remove from the oven and let it cool slightly.

          Sauté the Spinach and Garlic:

            - In a skillet over medium heat, add a drizzle of olive oil. Sauté the minced garlic for about 1-2 minutes until fragrant, and then add the chopped spinach. Cook until wilted, about 3-4 minutes. Remove from heat and let cool.

              Prepare the Cheese Mixture:

                - In a large mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, the egg, Italian seasoning, red pepper flakes (if using), salt, and pepper. Mix well to create a creamy mixture.

                  Combine Ingredients:

                    - Once the spaghetti squash is cool enough to handle, use a fork to shred the flesh into strands. Add the shredded squash to the cheese mixture along with the sautéed spinach and garlic. Mix until everything is combined evenly.

                      Assemble the Bake:

                        - Transfer the mixture into a greased baking dish (about 8x8 inches). Spread it out evenly. Top with the remaining mozzarella cheese.

                          Bake:

                            - Place the baking dish in the oven and bake for 25-30 minutes, or until the cheese is melted and bubbly and the top is lightly golden.

                              Serve:

                                - Remove from the oven and let it sit for about 5 minutes before serving. Garnish with chopped fresh basil for an added burst of flavor.
