Creamy Spinach Stuffed Sweet Potatoes

4 medium sweet potatoes

2 cups fresh spinach, roughly chopped

1 cup ricotta cheese

1/2 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

1/4 teaspoon nutmeg

Salt and pepper, to taste

1 tablespoon olive oil

2 tablespoons grated Parmesan cheese

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake Sweet Potatoes: Wash the sweet potatoes thoroughly and poke a few holes in each with a fork. Place them on a baking sheet and bake for about 45-50 minutes, or until tender when pierced with a fork.

      Sauté Spinach: While the potatoes are baking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped spinach and cook until wilted, about 3-4 minutes. Season with salt, pepper, and nutmeg.

        Prepare Creamy Mixture: In a mixing bowl, combine the sautéed spinach, ricotta cheese, cream cheese, and half of the mozzarella cheese. Mix until smooth and creamy. Adjust seasoning with more salt and pepper as needed.

          Stuff Sweet Potatoes: Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently scoop out a portion of the flesh, creating enough space for the filling. Be careful not to break the skin. Mix the scooped-out sweet potato flesh into the creamy spinach mixture.

            Fill Potatoes: Spoon the creamy spinach filling back into the sweet potato skins, evenly distributing the mixture. Sprinkle the remaining mozzarella cheese and grated Parmesan on top.

              Bake Again: Return the stuffed sweet potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                Serve & Garnish: Remove from the oven, garnish with fresh parsley if desired, and serve warm.
